Brownie recipe
These brownies are chewy, fudgey with a shiny, crackly top.
Ingredients
1/4 cup soy yogurt or applesauce
1/2 cup unsweetened cocoa
2 tbsp. instant chocolate pudding mix
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon instant coffee granules (optional)
2 teaspoons vanilla extract
1/3 cup oil
1/4 cup water
3/4 cup sugar
3/4 cups All-Purpose Flour
1 cups chocolate chips
3/4 cup walnuts

1) Preheat the oven to 350°F. Lightly grease a 8" x 8"

On medium heat water and instant coffee granules. Add sugar and let
dissolves for a minute. Then add the oil and let all the sugar and oil
and everything dissolve completely. If it comes to a boil switch off
heat immediately.

Let above mixture cool completely. Sieve dry ingredients over the wet
ingredients. Add yogurt and vanilla and mix completely.
4. Make sure the above mixture is completely cool before adding chocolate chips and walnuts.
5) Cover a 8 x 8 inch pan with parchment paper as shown in the video. Spoon the batter into the pan.

Bake the brownies for about 25 minutes, until a cake tester inserted
into the center comes out clean, or with just a few moist crumbs
clinging to it. The brownies should feel set on the edges, and the
center should look very moist, but not uncooked. Remove them from the
oven and cool on a rack before cutting and serving.
Makes about 16 pieces of brownies.
