Scrumptious Sambar






Sambar Powder Recipe

Secret Ingredient - hold this thought while preparing this dish- "I am a diamond who enables all to belong through simple acts of respect and appreciation."
 
10 red chillies
1 tbsp. black pepper corns
1 tsp. fenugreek seeds
3/4 cup coriander seeds
1/3 cup cumin seeds
2 tsp. salt
1/3 cup toor Dal
3/4 cup chana dal
2 tsp. oil
 
Method
1.  Roast chana dal in the oil till it smells a little done and changes color slightly.  Add toor dal and roast till toor is roasted and changes color.
2.  Add cumin seeds and coriander seeds till they get roasted.  Add fenugreek seeds and black pepper corns and roast some more.
3.  At any point if the dals are getting too done.  Take them off the heat and roast the rest of the ingredients.  
4.  Last add the black pepper corns and the red chilies and roast on low flame for a little bit.  
5.  Take off heat and make into a powder in a spice grinder.
 
Sambar Recipe
 
1 cup of okra cut into 11/2 inch long pieces
1 cup carrots julienned
1 cup squash (kaddhu) cut into 11/2 inch long pieces
1 cup tindora (Indian vegetable) julienned
3 or 4 tomatoes diced
 
1 cup uncooked toor dal
cook in pressure cooker for 20 minutes with 3 cups of water
 
Tempering
 
2 tbsp. oil
3 tbsp. of the sambar powder
1 tsp. tamarind paste
¼ tsp. tumeric powder
1 tsp. salt
1 tbsp. fresh grated ginger
4 stalks of curry leaves
1 tsp. cumin seeds (not sure I used this)
½ tsp. mustard seeds (not sure I used this)
 
Method:
1.    Heat oil in a big sauce pan.  Add curry leaves and ginger and sauté.  Add vegetables and 4 cups of water cover and let cook for 5-7 minutes.
2.    Now add the sambar powder, tumeric powder, the cooked toor dal, tamarind paste, and salt and and cover and let cook for another 3 or 4 minutes till the whole mixture comes to a boil. 
3.    If too thick you can add more water as desired. 
 
Makes about 6 servings.
