Perfect Pad Thai

Ingredients

Sauce
1 cup coarsely chopped tomatoes
1 tbsp. mirin (optional)
1 tbsp. sesame oil
1 tbsp. miso
1-1/2 tsp. tamarind concentrate
2 tbsp. Thai chili paste (or to taste)
2 tsp. ginger
2 tbsp. palm sugar

Pad Thai

2/3 lb. rice stick noodles
16 oz. extra firm tofu
16 oz. firm tofu
1 tbsp. soy sauce
3 cups cabbage julienned
1/2 cup French cut green beans
1 cup carrots julienned
1/2 cup chopped fresh cilantro
2 cups bean sprouts
1/8 tsp. turmeric
1 tsp. ginger
1/2 lime
1/4 cup crushed peanuts

For sauce
1. In a blender take chopped tomatoes, mirin, seseme oil, miso, tamarind concentrate, Thai chili paste, 1/2 cup of water and blend.
2. In a saucepan, on med. heat or med low, heat 1 tsp. of oil and add ginger. Sauté until ginger is slightly cooked, then add sauce and bring to a soft boil on low heat. To this add palm sugar. Let sugar melt then turn off heat and put sauce aside.

Pad Thai
1. Soak rice noodles in water for 20 minutes.
2. Dice extra firm tofu into cubes and saute' in sauce pan and sauté in 1 tbsp. oil and 1 tbsp. soy sauce. Cook on med high heat until golden brown. Set aside
3. Take firm tofu and scramble with your fingers. Mix 1 cup of cabbage with tofu and cook both in 1 tbsp. of oil on medium heat. Add turmeric, ginger, salt and pepper to taste and sauté 5 min. Set aside. 4. Take soaked noodles and cut in half.
5.In sauce pan, saute' 1/2 each green beans and carrots, cook for a few minutes, then add 1/2 of the cabbage and scrambled tofu mixture and sauté together (it is much easier to prepare 2 servings at a time). Add 1 cup of noodles and sauté with rest of mixture. Add 1/4 cup water - as needed then 1/4 sauce mixture. Add 1/2 cup bean sprouts and 1/4 of the fried tofu. Sauté for 5 minutes until noodles are done. Squeeze 1 lime slice over mixture and add crushed peanuts. Serve. Repeat with the rest of ingredients.
