Celery Sweet Potato Soup

Ingredients

2 medium sweet potato
1/4 cup fresh basil
1 bunch of celery
5-6 bay leaves
salt & pepper

1. Peel and chop potatoes into one inch cubes - should yield about 2 cups. Take celery cut heads and tails off and cut across the grain into thin slices - should yield about 6 cups.
2. Take 1 tbsp. of oil and heat in a large saucepan on med high heat. Sauté celery for 3-4 minutes until slightly brown. Add bay leaves, 1 tsp. salt & 1/4 tsp. pepper, or to taste and mix. Stir in  sweet potatoes and add 6 cups of cold water. Mix thoroughly, cover, and cook approx. 20 minutes.
3. Test potatoes for doneness with a fork. Transfer soup to a stainless steel bowl. Pick out bay leaves, add basil, and blend with hand blender.
