Oats Upma
Ingredients
1 Cup Old Fashioned Oats (I’m using organic gluten free oats)
2 tbsp. chana dal
1 tbsp. urad dal
1/2 tsp. cumin seeds
2 tsp. of ginger paste
2 red chilies (cut them 1 inch long)
¼ cup cashew nuts
¼ cup grated carrots
¼ cup green bell pepper
½ cup chopped cabbage
2 tbsp. of vegan butter (or regular butter)
2 stalks of curry leaves

Method
1. Take a sauce pan on medium high heat. Melt the vegan butter and add, cumin seeds, ginger paste, urad dal, chana dal, cashew nuts, and red chilies. Saute this mixture for about 1 to 2 minutes.
2. Add the cabbage, carrots, and chopped pepper and sauté for another 1 minute.
3. Now add the oats and salt and sauté for about 1 minute.
4. Add 1 cup of boiling hot water to the above mixture, mix thoroughly, cover and let cook for about 5 minutes.
5. Remove the cover, mix in the pan till all the water gets absorbed.
6. Serve with your favorite pickle.
