Indian Flat Beans (Papdl Subzi/Chikkudu kai) Indian Vegetarian Sabji
Ingredients
3 cups prepared flat beans
1 tbsp. oil
1/2 tsp. cumin seeds
2 stalks of curry leaves
1/2 tsp. turmeric
1 tsp. coriander
chili powder to taste
1 tsp. graded ginger
1/2 soy milk
1/2 tsp. salt
1/4 cup powdered toasted peanuts
1/2 cup water

Method
1. Prep beans by pinching off the top and tail and peel edge fibers off. Tear into half inch pieces. Open the pods and take some of the beans out. Rinse them thoroughly.
2. In a non-stick pan add 1 tbsp. oil, 1/2 tsp. of cumin seeds, and 2 stalks of curry leaves. Let them heat until cumin seeds pop. Add beans and sauté for about 1 min.
3. Add 1/2 tsp. turmeric, 1 tsp. coriander, and chili powder to taste. Saute' for another min. then add 1 tsp. graded ginger.
4. Add 1/2 cup soy milk and 1/2 tsp. salt. Saute' then cover on med high heat for 10 min.
5. Add 1/4 cup powdered toasted peanuts. Saute' again, then cover and let cook for approx. 2 minutes. Then add 1/2 cup water, mix thoroughly, and cover and let cook another 2-3 min until most water is absorbed. Enjoy!
