Four Dal Dosa (Mixed Lentil Crepe)
Ingredients
¼ cup chana dal
¼ cup moong dal
¼ cup urad dal
¼ cup toor dal
2 cups water
1 tsp. salt

Method
- Combine the dals in a pot and rinse thoroughly.
- Pour 2 cups of water (the water should be twice the amount of combined dals).
- Soak overnight or for a minimum of 6 hours.
- Blend with 1 tsp. salt till a fine paste forms. When you feel the batter between your fingers there shouldn’t be any grainy-ness. It should be a fine paste.
- Take a dosa pan on high heat, pour some oil and wipe it off with a paper towel.
- Take a ladle full of batter, pour in the center of the pan, and spread the batter evenly with an anti-clockwise circular motion.
- Let cook on one side for about 2 minutes before flipping over. Let cook on the other side for 1 minute.
Makes about 8 medium sized dosas.
