Green Beans (with Besan) Indian Subzi
1/3 cup besan or chickpea flour
1/4 cup sliced almonds
1 tbsp. oil
2 tsp. ginger paste
1 1/2 tsp. coriander powder
1 tsp cumin seeds
1/4 tsp. tumeric powder
1/4 tsp. red pepper flakes
2 cups or 1 lb. green beans
fresh coriander for garnish
salt to taste
1/3 cup and 1/4 cup of water

Method
1.
Chop off the tops and tails of the green beans and
cut them into halves.
2.
Heat a pan on medium heat and toast the chickpea
(besan) flour for about 5 minutes.
Till it starts moving around in the pan easy and smells flavorful.

Remove the toasted chickpea flour from the pan.
4.
In the same pan heat the oil, put in the cumin
seeds, pepper flakes, and ginger and sauté for a minute. Add the coriander powder and sauté for
another minute.

Add the green beans sauté for a minute in the
spices and add 1/3 cup water, salt to taste and mix well, cover and let cook
for about 7 minutes or till the green beans are just about done.
6.
Now add the toasted chickpea flour and sliced
almonds and another ¼ cup water, cover and let cook for another 2-3 minutes.
7.
Switch off the heat and garnish with fresh
coriander.
8.
Take a wrap (I’m using chapattis) and wrap the
subzi in it.
Serves around 4 people.
