Curry Puffs with Puff Pastry (Indian Vegetarian Fusion)


Ingredients

1 lb of puff pastry dough - thaw for 40 minutes
12 oz of extra firm tofu or tofu cutlets
1 lb of long beans or any combination of vegetables
2 tsp. oil
1 tsp. curry powder
1/4 tsp. cayenne powder or to taste
1 tsp. salt

Method 

Preheat oven to 400
1. Cut veggies into small 1 inch pieces and cube tofu into 1/2 inch pieces.
2. Add 2 tsp. of oil in pan and on med high heat saute' beans for 1 minute. Add tofu and saute' for another few minutes. Add curry powder, cayenne powder, and salt. Mix thoroughly and let cook uncovered 10-12 minutes.
3. When done, allow to cool to room temperature.
4. Dust work surface with flour. Unwrap 1 pastry sheet, dust with flour and roll out dough until a few inches bigger than original size.
5. Cut into 4"x3" pieces so that you yield approx. 9 pieces per sheet. Repeat process with 2nd sheet. 6. Place 2-3 tbsp. of veggie mixture onto dough piece. Wet one edge with water, fold and pinch to make puff.
7. Arrange 1" apart on baking pan and bake for approx. 20 minutes or until golden brown.
