Quesadilla Sweet Potato and Black Bean (Vegan)

Ingredients
2 Med sweet potatoes
½ cup diced green bell pepper
1 cup diced cabbage
30 oz cooked black beans
1 tbsp oil
½ tsp cumin seeds
2 tsp oregano
½ tsp salt
½ tsp cayenne pepper (optional)
1 tbsp lime juice
1 tbsp vegan butter (optional)
8 tortillas
¼ cup vegan cheddar cheese

Method
  1. Boil sweet potato until soft.
  2. Sauté cumin seeds and oregano in oil until heated and mixed well. Then add bell pepper and cabbage and sauté for approx 1 minute.  Add black beans and continue to cook for 4-5 minutes. Stir in salt, pepper and cayenne pepper.
  3.  Turn off heat and mash mixture. Stir in lime juice.
  4. Peel and mash sweet potatoes, add butter, salt, and pepper.
  5. Take a tortilla and spread ¼ of sweet potato mixture, put ¼ black bean mixture on top, sprinkle with vegan cheese. Cover with tortilla.
  6. To heat
Quesadilla Maker - spray with cooking spray and heating for 5-6 minutes.
Stove top – add vegan butter and cook 1-2 minutes on each side on high heat.

Salsa
½ large cucumber – peeled and de-seeded
3 med tomatoes
½ cup cilantro
1 chili pepper (optional)
1 tbsp lime juice
½ tsp salt
black pepper to taste (1/8 tsp)

Finely dice cucumber and tomato, chop cilantro and chili pepper. Add lime juice, salt, pepper, and blend.
