Meyer Lemon Poppyseed Bundt Cake Recipe

2 cups all purpose flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 Meyer lemons seeded and chopped
1 cup soy milk
1/8 tsp xanthan gum
1 cup sugar
1/2 cup oil
1/3 cup poppy seeds

Method:
1.  Preheat oven to 350F. Grease baking dish.
2.  Take seeds out of the Meyer lemons, and chop about 1/2 inch thick cubes.  The skin is very thin so the skin can be used for this recipe.
3. Sieve together flour, salt, baking soda, and baking powder.
4. In a blender, finely blend Meyer lemon, oil, milk, sugar, and xanthan gum.
5. Mix dry ingredients with wet ingredients taking care not to handle the dough too much.  
6. Fold in the poppy seeds.
7. Bake at 350F for about 45 minutes or till a toothpick comes out clean.
