Irish Soda Bread (Vegan)



3 cups flour
1/3 cup sugar
1  tsp.  baking soda
1 ½  tsp. baking powder
1/2 tsp. salt
2  teaspoons caraway seeds
1/4  cup cold vegan butter cup up into small pieces
1 cup soy yogurt
1/3 cup soy milk 
1 Tbsp. vinegar
3/4 cup golden raisins plus 1 Tbsp. of flour
1 Tbsp. packed light brown sugar for dusting on top

Directions

1.     Preheat the oven to 350 degrees F. Line a baking pan with parchment.

2.     Cut in the vegan butter and sugar with a mixer in a bowl. 

3.     Sift flour, baking soda, salt, and baking powder in a bowl.  Mix in the caraway seeds.

4.     In another bowl, take the soy yogurt, add the vinegar and the soy milk and whisk thoroughly. 

5.     With the mixer on low-speed, slowly add the liquid ingredients into the flour mixture.

6.     Combine the raisins with 1 tablespoon of flour and mix into the dough.

7.     Form the dough into a round loaf on a floured surface. 
8.     Place the loaf on the baking pan and lightly cut an X into the top of the bread with a serrated knife.

9.     Sprinkle top with sugar.

10.  Bake for 50 to 60 minutes on 350F or until a toothpick comes out clean. When you tap the loaf underneath, it will have a hollow sound.

11.  Cool on a wire rack.  Best eaten warm or at room temperature.
