Easy Yummy Lentils
1/4 tsp. cumin powder
1/4 tsp turmeric powder
1/2 tsp curry powder
1 tsp. coriander powder
1 tbsp. grated fresh ginger
Salt to taste
1/2 can (7 oz. or 200 ml) coconut milk full fat
1/2 cup fresh mint
1 cup lentils
2 cups water
1 cup pumpkin cut into 1/2 inch thick cubes. You can also use butternut squash or sweet potato

Method
1. Wash the lentils and soak in water for 2 to 3 hours. The soaking bit is optional. If we soak the lentils then we cook them for much less time.
2. Take a sauce pan. Add oil. The heat should be medium high.
3. Sauté cumin, curry powder, and ginger for a minute. Add the pumpkin and sauté for another minute. Then add coriander and tumeric powder. Saute' for a few seconds.
4. Add the soaked lentils with water, cover with lid and cook for 5 minutes.
5. Now add the salt, 1/2 can coconut milk and the fresh mint. Cover and cook for another 3 minutes.
6. Garnish with fresh cilantro
Serves about 4 or 5 people.
