Easy Eggless Quiche
Quiche Ingredients
8 oz firm tofu chopped into fine bits
1/2 cup soy milk
2 tbsp. corn starch
2 tbsp. nutritional yeast
1/4 cup vegan parmesan if using then might have to put more
milk.
1 tbsp. mustard
Salt
Black pepper
Veggies
2 cups baby spinach finely chopped
1/2 cup cabbage finely diced
1/2 cup chopped tofu cutlets
1 tsp. oil
1/8 tsp nutmeg
1 pie crust
Preheat to 400
Method
1. Blend all of quiche ingredients in blender until tofu us
smooth.
2. Sauté the cabbage for 1 minute. Add in tofu, salt, and
nutmeg.
3. Add spinach and cook 2-3 minutes until water is cooked out of
it.
4. Add to quiche mixture and mix well. Pour into pie crust.
5. Bake for 25-30 minutes. Use toothpick to test. Toothpick can
be a little moist.
