Seitan Lettuce Wraps
Ingredients:
4 Large Wraps
1/3 head of butter lettuce or any greens torn into strips
1/2 cup match stick carrots
1 cucumber peeled and coarsely julienned
For Seitan mixture
10 ounce package Seitan drained and rinsed
1/3 cup mint coarsely chopped
½ cup or 1 bunch cilantro chopped
1 Tbsp sesame oil
1 Tbsp fresh ginger, chopped finely
2 tsp. oil
½ cup cabbage coarsely julienned
1 Tbsp. date or any liquid sweetener
Sauce
1/2 cup peanut butter
1 Tbsp sesame oil
2 Tbsp soy sauce
2 Tbsp. of agave nectar
1 Tbsp. Mirin (a Japanese condiment available in Asian stores)
½ tsp. ginger powder
1 Tbsp. Sambal Oelek (chili paste) or to taste
2 to 3 Tbsp. water
Directions:
- For the sauce: in a bowl, beat peanut butter, sesame oil, soy sauce, Mirin, ginger powder, agave nectar (or any liquid sweetener) and Sambal Oelek (if using). Add enough water till the sauce has a runny consistency.
- Sauté the Seitan on medium high in 1 tbsp of sesame oil for about two minutes. Add ginger and cook for five minutes. Add half the sauce and cook for about 3 minutes. Turn off the heat and add the chopped mint and cilantro.
- In a separate sauce pan, heat up on medium high 2 teaspoons of oil and add the cabbage and sauté for 3-4 minutes. Add the sweetener and sauté till the cabbage is caramelized.
- Mix the Seitan and cabbage mixtures together
- For making the wraps: Take a wrap, brush the middle with some of the leftover sauce, place the cucumbers, carrots, and then the Seitan filling. Top with the greens and fold like a taco.
